Flinders , Mornington Peninsula, Victoria, Australia
Hand-picked; saigne from Pinot Noir; Approximately 5-8% of juice from each of the clonal ferments around 12 to 14 hours after de-stemming the fruit. It was then barrel-fermented in mostly old French oak barrels for 7 months; bottled in February 2019. Only two barrels were made.
Light pink; salmon.
Hints of spice and strawberries.
A very pleasantly dry wine. Perfumed and smells like rose petals rushed with honey, with mid-palate richness and a lush texture.
9-11 degrees Celsius
With a platter of cheese and biscuits or even better with oat-meal and raisin bread or enjoy chilled on its own.
Best enjoyed early but it will last and improve in bottle for 5-6 years.
